Mixed Berry Yogurt

So many fans of the documentary tell me they love how mixed berry yogurt was a staple in mine and Jim’s relationship foundation. It’s true that it’s the defining moment I knew I liked him. Jim notices everything. He can make something so insignificant feel very special.

In my efforts to match the significance of this moment in our relationship, my humble mixed berry yogurt sure got an upgrade! This is what I eat almost daily now. Cece and Phillip love it, too.

First, let me break down the recipe for my Crunchy Pecan and Cranberry Museli:

Ingredients:

  • 4 cups old-fashioned rolled oats
  • 1 cup raw pecans, quartered
  • 1/4 cup brown sugar, packed
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup raw sunflower seeds
  • 1/4 cup raw pumpkin seeds
  • 1/4 cup vegetable oil
  • 1/4 cup agave syrup (or sub maple syrup)
  • 1/2 tsp salt
  • 1/2 cup dried cranberries
  • 1/4 cup chia seeds

Instructions

  • Preheat oven to 350 F
  • Add all dry ingredients (except dried fruit) to a large bowl, mixing to combine.
  • In a separate small bowl, mix together the vegetable oil, agave syrup and salt until well combined. Add to the dry ingredients and stir to incorporate.
  • Evenly distribute over a large cookie sheer or glass casserole dish, lined with baking paper, and place in the oven.
  • Remove from oven and stir every 10-15 minutes to avoid burning and to ensure even browning. Once lightly golden brown remove from the oven and allow to cool, about 40 minutes. Note: the granola will harden as it cools.
  • Once cooled, add dried fruit and chia seeds and stir to combine. Place in an airtight container and store for up to 1 month.

Now, for the parfait!

Ingredients

  • 1/4 cup homemade Crunchy Pecan and Cranberry Muesli (or granola of your choice)
  • 1/2 cup plain Greek yogurt (sometimes I use vanilla or coconut)
  • 1/4 cup frozen strawberries, raspberries, blueberries, defrosted
  • 1 Tbsp ground flax seeds

Instructions

  • Place the frozen berries in the microwave for about 60 seconds or until defrosted while you prepare your other ingredients, or use fresh berries instead. Layer ingredients in a cup or bowl, and enjoy!

Reduce the likelihood of heart attack and stroke.
Lessen the chance of sudden cardiac death in people with heart disease.
Flax and Chia seeds both contain high levels of Omega-3 Fatty Acids.
